The aim of this approach is to reduce the carbon footprint of each dish offered. To achieve this, the ingredients used are produced less than 40 km from the service area. What’s more, all the produce is fresh and sustainable.
The challenge that Chef Patrice Verdon wants to take up is above all to share preserved flavours while limiting his impact on the environment!
